Lime Rickey Sorbet
Yield: 6-8 Servings
Note: You will need an ice cream maker for this recipe
1 1/2 cup Water
1/2 cup Sugar
2 cups Lime Rickey (or Carbonated Lime Soda)
1/2 – 1 cup Strait Shine® (or your favorite Vodka or Gin)
Bring the water and sugar to a boil. Remove from the heat and add the Lime Rickey, stirring to combine. Add anywhere from 1/2 cup to 1 cup of moonshine to the mixture. The amount of moonshine will depend on personal taste.
Allow to cool, and process as per the directions on your ice cream machine. Allow to firm up in the freezer for serving.
Chef Mark suggests using all of the moonshine in the recipe or to reserve a little to put a splash on each serving.
