Add Gin, lime juice and Jasmine simple syrup to the shaker with ice. Shake, strain and then serve in a tall glass, with ice and a grapefruit wedge. For added flair and flavour rim the glass with some pink Himalayan salt.

Jasmine Simple Syrup Recipe : Boil 1 cup of water in a small pot, add 2 Tbsp of PEI’s Lady Baker Dragon Pearl Jasmine tea once water is boiling, add 1 cup of white sugar, stir until dissolved then take off of heat. Recipe makes enough for 16 Palomas. Store in an airtight jar in the fridge. Will stay fresh in the fridge 2- 3 weeks
